Karen Lee
BSc MSc PGCert
Nutritionist, Author, Chef
Karen is a retired intensive care nurse and naturopathic nutritionist who has a passion for amazingly tasty food that’s also great for health. She has been sharing her innovative whole-food plant-based recipes and teaching others how to use food as medicine as The Sensitive Foodie since 2014. Karen is the author of ‘Eat Well Live Well with The Sensitive Foodie’ and her second book ‘Healing From The Inside Out’ is due for publication later this year. After a lifetime of migraines and yo-yo dieting, Karen discovered she had an allergy to dairy and yeast; eliminating these foods started her healing journey and piqued her interest in the value of food as medicine. Whilst studying nutrition, she took a career break as her husband’s work relocated the family to India for 3 years. It was here she met Dr Nandita Shah who promotes eating a whole-food plant-based diet. Karen changed to a plant-based diet in 2011, lost weight – and sustained it – naturally, personally experiencing the value of culinary medicine. It was Dr Shah who encouraged her to start sharing this on the family’s return to the UK. The Sensitive Foodie Kitchen was established to do just this. Karen also returned to work in ITU, now fully aware of the negative effects of the Western diet pattern on health reflected in many of her patients. Despite her personal changes, Karen was diagnosed with an autoimmune disease in 2016 and left nursing to focus on her personal health using diet and lifestyle and The Sensitive Foodie. She has run in-person and online workshops, cooking classes and courses and holds a weekly online nutrition clinic. Karen also works as a facilitator for the charity Overcoming MS which provides an accessible lifestyle medicine program that supports people with MS. She is the Event Manager for Plant-Based Health Professionals and teaches medical students how to cook plant-based meals as part of their Cooking for the Climate module. Karen and her husband moved from Sussex in 2023 to Devon where they grow their own fruit and vegetables and enjoy travelling the area in their motorhome.
